Crock Pot Tacos

Someone on facebook posted this fantastically easy recipe a few weeks back and it has literally been on our menu once a week since!  We LOVE it and it is so super easy!!!  I was going to take step-by-step pictures to make it all fancy and such, but I felt so sick yesterday and was super busy that I didn't get the chance, sorry.

First, take 4 frozen chicken breasts and put them in the bottom of your crock pot.

Next, take your favorite jar of salsa (mild, spicy, corn and beans, etc.) and pour on top of the chicken.  You can use a small jar or large - depends on how salsa-y you like it.  The first time I made it I used a standard, small jar and it turned out fine.  Lately, I've been using a large jar because that is all Aldi sells and it turns out just as great!

Cook on high for 4-6 hours (or low for 8 hours).  15 minutes before you are ready to eat, use a fork (or other utensil) to break up the chicken into shredded form.  Then put in a block of cream cheese and stir it as best you can.  Let it sit if you need to to melt and then stir it all together!

We then use this as tacos but we prefer it on small, fajita style shells. A little sour cream, shredded cheese, lettuce, tomato, taco sauce - YUM-O!!!!!

Can't wait for leftovers tonight!!!
