Monday Menu

Wow, it's Monday and the meal plan is going up!!!  Here's what's cookin' in the Elliott household this week!

Monday - I went grocery shopping so I brought home a pizza to bake while I put away groceries.  I mean, who likes to cook after grocery shopping??

Tuesday - Weight Watchers Cajun Chicken Wraps - yup, those babies were so good I've been craving them since the first night! Add some chips and fruit and yum-o!

Wednesday - Porcupine Meatballs. So good and pretty easy, the only thing that takes time is rolling all the balls out, but they are de-lic-ious!

Thursday - Tacos - I told you, some sort of "Mexican" meal once a week in this house! 

Friday - Chicken Sandwiches - ending the week easy peasy!  Mix together your favorite seasonings, sprinkle on top and bake!

Saturday - Cookout at the in-laws!  Love when I don't have to cook on the weekends!

Sunday - Either oven-fried chicken or sweet and sour meatloaf.  I haven't decided yet, although you'll know based on next week's menu - whichever one shows up, well we had the other one on Sunday night!

St. Patrick's Day Bust!

Green Pancakes - a day late...


One of my goals currently is to do more fun holiday themed things with and for the kids!  We had a great time for Valentine's Day and I had begun looking for things to do for St. Patrick's Day.  Unfortunately, the whole day was a bust - in terms of all things green!  

On Friday, Hannah wore green to school along with the rest of her class (seeing a whole bunch of 4 year olds all in green was super cute by the way!) On Saturday neither of the girls had any desire to wear green, especially Emma.  What is up with that?? I rocked my one and only green shirt proudly.  So we had plans for green pancakes for breakfast and Shepard's Pie for dinner (the husband's request). I still can't remember what our plans were for lunch originally, but I guess it doesn't matter since the whole day was a bust.  We woke up and headed downstairs to make some pancakes..... but we were out of eggs.  Oh man!  Well, I thought, we'd hurry and run to the store to do our quick grocery shop and come home and make green pancakes for lunch!  Well.... our list of errands included going to the bank, picking up a trashcan and outdoor garbage bags at Lowe's, dropping off mail at a mailbox in town - our flag won't stay up so our mail lady won't take any I leave in there :( , go to Aldi for our groceries and then head to Target for whatever Aldi didn't have and to get Emma new tennis shoes.  We didn't need much, I was only shopping for one week so it shouldn't take too long!  

After the first three errands it was nearing noon and I knew the green pancake lunch wasn't going to happen so we headed to Subway.  No luck (no pun intended).  They were remodeling that location and I didn't want to go across town to the other one.  Second choice - Chick-fil-a of course!  The kids were thrilled.  We ate lunch, they played and then we went to Aldi and Target.  By the time we got home and put away the groceries it was around 2:30PM and I still needed to bag all the leaf piles I made on Thursday.  Four piles in and I knew I wasn't going to make Shepard's Pie, let alone dinner at all.  Hoping I can talk my husband into eating out tonight, I continue to bag leaves.  Nine bags later I was wore out.  We walked to Bruster's for dinner and ice cream.  So no green pancakes and no Shepard's Pie.  This St. Patrick's Day was NOT turning out very green!

BUT, I did end up making those two meals after all.  Green pancakes for the girls for dinner on Sunday and Shepard's Pie for the husband on Monday.  So, the day didn't turn out very lucky or green but we did eat green and Irish for two days afterward - you can call it an extension of the holiday!

What's for Dinner - Weekly Menu

I know, I'm late again.. oh well... I kind of like posting on Wednesday rather than on the madness otherwise known as Monday!  So here is what we're having this week - I'd love to hear what you are eatin'!

Monday - I was supposed to make Braided Spaghetti, but I was going to make my own dough instead of what the recipe called for.  When push came to shove and the noodles and meat were on I couldn't find my yeast - CRISIS!!!  So we settled for regular ol' spaghetti instead and it was still delicious!

Tuesday - Chicken fajitas!  I did a really poor job at planning these recipes out.  First it was supposed to be steak fajitas using some steak I got on sale awhile back, but it was gone.  I either thought I bought it or someone made a midnight snack.... both are equally as likely!  So I went with chicken fajitas only to realize I was out of chili powder... ugh!!  My husband gratefully ran to Aldi (they have the best deal on spices) to pick some up for me since I literally just returned from the same store 20 minutes earlier with fajita shells.  (They make THE BEST fajita shells so we ended up using all I bought last week for another recipe - seriously. so. good.)

Wednesday - Tonight we're having Cajun Chicken Wraps - a weight watchers recipe, yay!  I was going to buy different tortillas but the ones from Aldi are soo beyond delicious that I'm sacrificing the calories for tastiness (have I mentioned have wonderful they are?)!

Thursday - Another weight watchers recipe courtesy of pinterest, we're having Bubble Up Enchiladas.  Can you tell we like to eat Mexican food in our house? I love, love, love enchiladas and hope these turn out wonderful as well.  I haven't decided if I'll do chicken or beef though...

Friday - Spinach Lasagna Rolls - they looked easy and delicious, just what we need on a Friday night!!!

Wednesday's Weekly Menu

I know, I know - these are supposed to be Monday Menu's but I forgot, so we'll just go with Wednesday this week!  I haven't even posted menu's in months, so a few days late will be OK, right? I've been finding so many yummy recipes on pinterest that we're enjoying new recipes more often - yay - so I don't have to post the same five things every week and wanted to share!!

Monday - Dirty Rice - nothing fancy.  Just a box of the mix and a pound of ground beef.  Add a side of vegetables and call it done.  We also made mac-n-cheese because I knew Emma wouldn't touch the dirty rice even if it was topped in chocolate!

Tuesday - Taco Tuesday - we eat tacos a lot.  Sometimes chicken tacos, sometimes my new obsession chicken crock pot tacos, and other times I break down and make traditional tacos using ground beef.  It's Emma's favorite and I aim to please!  Add refried beans and red beans and rice and we're good!

Wednesday - Tonight we're having another pinterest recipe.  Hawaiin Chicken in the crock pot!  Take frozen chicken breasts, a bottle of Hawaiian bbq sauce (or your favorite - I stuck with Sweet Baby Ray's to save myself $2) and a can of crushed pineapple.  Throw it all in the crock pot and cook on low for 6-8 hours.  Serve over rice or on your favorite buns!  This also makes a great make ahead meal.  Throw all the ingredients in a ziploc bag and freeze until ready to cook - then throw in the crock pot. 

Thursday - I'm so excited for Thursday night's dinner.  I have been craving these bad boys for weeks!  I'm making whole wheat blueberry pancakes - OMG!  And of course I'll be making plain pancakes (whole wheat of course) for the man of the house and I'll probably make a few chocolate chip pancakes for the little ones.  I've got some turkey bacon too!  Can. Not. Wait!

Friday - We'll end the week easy with some Turkey BLT's with a side of fruit!  Maybe some chips....

One night this week I hope to make these:


Bite size apple pies.  Don't they look delicious??? I've got all the ingredients, just need to make them! Take a guess where I got the idea from.... PINTEREST

Next week is mostly all pinterest recipes - so excited to make them!!
